Recently, my daughter and I made ham and cheese roll sandwiches, and we ended up cutting off the crusts. Instead of discarding them, I decided to make delicious rusks from those leftover bread edges! Using fragrant butter, sugar, and a hint of cinnamon, these rusks turn out wonderfully crispy and savory. You don’t have to use just the crusts; any bread slices can be cut and transformed into these delightful treats. I plan to make them often whenever the craving strikes!

Ingredients

  • Bread crusts/edges (from 4 loaves) – approx. 16 pieces
  • Butter, 3 Tbsp
  • Sugar, 1.5 Tbsp (adjust to taste)
  • Cinnamon powder, 1/4 tsp

First, prepare the bread crusts that were leftover from making roll sandwiches. Tip: If you made 4 roll sandwiches, you’ll have the crusts from 4 loaves of bread, which is about 16 pieces.

In a pan, melt 3 tablespoons of butter over medium-low heat. Once the butter is melted, add 1/2 tablespoon of sugar and stir well until the sugar dissolves. This creates a flavorful, slightly caramelized base for your rusks.

Reduce the heat to very low. Add the prepared bread crusts to the pan. Using a spatula or chopsticks, continuously stir the bread pieces to ensure they are evenly coated with the butter and sugar mixture. Cooking over low heat and stirring constantly prevents burning and results in perfectly crispy rusks.

Once the bread pieces are golden brown and starting to crisp up, add the remaining 1 tablespoon of sugar and the 1/4 teaspoon of cinnamon powder. Stir gently to coat the rusks evenly. You can turn off the heat at this stage; the residual heat will help the sugar melt and adhere beautifully.
