I have a habit of buying things in bulk because I dislike running out of anything, which often leads to buying a three-loaf pack of bread. Sometimes I toast it, but the other two loaves often end up in the freezer. Once, I had a lot of leftover bread crusts and edges from making sandwiches, and feeling wasteful, I decided to bake them into rusks. To my surprise, they turned out quite delicious! Everyone at church enjoyed them so much that since then, when sandwiches are made there, the deaconesses kindly pack several bags of bread edges for me. Oh my! So, I end up baking more to share… It’s a great outcome for the effort, doesn’t take long, and is easy to make in large batches without feeling overwhelmed. That’s why these rusks are so addictive once you start making them. Today, let’s bake a generous batch of these delightful rusks to share with dear friends.

Ingredients

  • 5 slices of bread (slightly stale bread works great!)
  • 2 Tbsp sugar (adjust to your taste)
  • 1 tsp cinnamon powder (for aromatic flavor)
  • 2 Tbsp grapeseed oil (or melted butter; olive oil is also an option)

Cooking Instructions

First, prepare your bread slices. Cut them into bite-sized pieces, about 1.5cm to 2cm thick squares or rectangles. These are perfect for a snack, fitting easily into one bite.

Place all the cut bread pieces into a large bowl or a zip-top bag. Drizzle the 2 tablespoons of grapeseed oil (or melted butter) evenly over the bread. Add the 2 tablespoons of sugar and 1 teaspoon of cinnamon powder. If you love cinnamon, feel free to add a little more.

Gently toss the bread to coat, being careful not to break the pieces. If using a zip-top bag, seal it tightly and shake gently to ensure the ingredients are evenly distributed. If using a bowl, use a spatula or your hands to mix softly.

Line a baking sheet with parchment paper. Arrange the coated bread slices in a single layer, making sure they don’t overlap. Place them in a preheated oven at 190°C (375°F) and bake for about 10 minutes. The tops of the bread should start turning golden brown.

After 10 minutes, carefully remove the pan from the oven and flip all the bread slices over. Return them to the oven and bake for another 5 minutes until both sides are golden brown and crispy. Baking time may vary depending on your oven, so keep an eye on them. Let them cool completely for the crispiest texture.
