Main Ingredients- 1 can of sweet corn (432g)
- 870g cooking oil (for frying)
- 7 Tbsp tempura flour
- 4 Tbsp water
Sweet Glaze Sauce- 4 Tbsp sugar
- 5 Tbsp cooking oil
- 4 Tbsp sugar
- 5 Tbsp cooking oil
Cooking Instructions
Step 1
First, drain the liquid completely from the canned corn using a sieve. It’s important to remove as much moisture as possible, as excess water can cause oil to splatter during frying.
Step 2
Finely chop the drained corn kernels using a knife or other utensil. For a quicker and easier process, you can use a blender or hand blender to achieve a finer consistency.
Step 3
In a bowl, combine the finely chopped corn with tempura flour and water. Mix well until you form a batter that holds together without being too watery. The batter should be thick enough to clump the corn kernels.
Step 4
Scoop out portions of the corn batter and shape them into small, round balls. A good tip is to gently clench your fist; the batter will naturally form a rounded shape between your thumb and index finger, which you can then roll into a ball.
Step 5
Carefully drop the corn balls into hot cooking oil. To prevent them from sticking together, gently stir them with chopsticks or a spatula as they fry.
Step 6
Once the corn fritters turn a beautiful golden-brown color, remove them from the oil using a sieve. Place them on a plate lined with paper towels to drain any excess oil. Be mindful of the cooking time to avoid burning.
Step 7
Now, let’s make the delicious glaze! In a pan, combine the sugar and 5 tablespoons of cooking oil. Heat over low to medium-low heat, allowing the sugar to melt slowly. Avoid high heat, as the sugar can burn quickly.
Step 8
As the sugar melts, stir continuously and let it simmer. Continue cooking until the sugar turns a light amber or caramel color and forms a syrupy consistency.
Step 9
Once the caramel glaze is ready, add all the fried corn fritters to the pan. Quickly toss and coat them thoroughly in the glaze, ensuring each fritter is evenly covered.
Step 10
Finally, transfer the coated corn fritters to a serving plate. To prevent sticking, you can lightly grease the plate with a little cooking oil before arranging the fritters. Enjoy your homemade crispy and sweet corn bbas!
