Crispy Sweet Potato Cheese Pancake
Crispy Cheese Sweet Potato Pancake Recipe – How to Make Sweet Potato Cheese Pancake
Sweet potatoes remind us of winter! We enjoy them steamed, fried, made into candied treats, or in salads. This time, let’s try a different approach by thinly slicing them and making them into a savory pancake. Adding cheese creates a wonderful snack, especially perfect for kids during their winter break.
Main Ingredients- 1 medium Sweet Potato
- 30g Mozzarella Cheese
- 10g Snow Cheese (shredded cheese)
- 1 slice Processed Cheese
Cooking Instructions
Step 1
First, wash the sweet potato thoroughly. Peel the skin using a knife or a peeler.
Step 2
Thinly julienne the peeled sweet potato as finely as possible using a knife or a mandoline slicer. Finer slices will result in a crispier texture. Rinse the julienned sweet potato in cold water to remove excess starch, then drain well in a colander. Ensuring the sweet potato is well-drained is crucial for a crispy pancake.
Step 3
Add 1 tablespoon of pancake mix to the drained sweet potato juliennes and toss gently to coat evenly. You can adjust the amount of pancake mix based on the quantity of sweet potato. Coating the sweet potato with pancake mix helps bind it together and makes it easier to cook.
Step 4
Add 2 pinches of salt and toss again to season the sweet potato. The salt will enhance the natural sweetness of the sweet potato.
Step 5
Heat a non-stick pan over medium heat and add cooking oil. Spread the coated sweet potato juliennes thinly and evenly in the pan. Pan-fry until golden brown on both sides. The edges should start to turn a light golden color.
Step 6
Once the bottom side is golden brown and crispy, place the mozzarella cheese over half of the pancake. You will be folding the pancake in half, so only fill one side with cheese.
Step 7
Fold the pancake in half, covering the cheese. Once the cheese begins to melt, reduce the heat to low and cover the pan with a lid. Cook gently until the cheese is fully melted and the inside is heated through. Low heat is important to prevent the cheese from burning. Your delicious sweet potato cheese pancake is almost ready!
Step 8
Cut the finished sweet potato cheese pancake into bite-sized pieces and arrange them on a plate. Drizzle a little honey over the top for an extra touch of sweetness.
Step 9
Finally, sprinkle some snow cheese and parsley flakes for garnish. This beautiful and delicious sweet potato cheese pancake is now complete!
