These sweet potato pancakes are made by coating thinly sliced sweet potatoes in a simple batter and frying them until perfectly crispy. The fluffy, well-cooked sweet potato inside is wonderfully delicious, offering a delightful contrast in texture. They are made with simple ingredients and make for a fantastic snack or a satisfying light meal.
Ingredients- 1 medium-sized sweet potato
- 70g pancake mix (about 1/2 cup)
- 1 pinch of salt
- Plenty of cooking oil (enough to shallow-fry)

Step 1
Prepare the Sweet Potato: Wash the sweet potato thoroughly. Place it in the microwave and cook for about 2 minutes. This pre-cooking step makes the sweet potato slightly tender, which helps in slicing and ensures it cooks through beautifully when pan-fried.
Step 2
Slice the Sweet Potato: Once slightly softened from the microwave, slice the sweet potato into thin pieces, about 0.5 cm thick. You can slice them into rounds or into thin strips, whichever you prefer. Thin slices cook more evenly and allow for a better coating of batter.
Step 3
First Coating of Pancake Mix: Lightly coat the sliced sweet potato pieces with the pancake mix. Ensure each piece is covered evenly on all sides. This initial dry coating helps the wet batter adhere better in the next step.

Make the Batter: In a bowl, combine 70g of pancake mix with about 100ml of water (approximately 1/2 cup). Whisk with chopsticks or a fork until you have a smooth, thin batter. The consistency should be slightly thinner than typical pancake batter; aim for something that drips easily but still coats the sweet potato. Adjust water as needed.
Step 5
Second Coating with Batter: Dip the sweet potato slices (already coated with dry pancake mix) into the prepared thin batter. Make sure each slice is fully submerged and coated evenly with the batter.

Heat the Pan: Heat a frying pan over medium heat and add a generous amount of cooking oil. Ensure there’s enough oil to shallow-fry the pancakes. Place the battered sweet potato slices carefully into the hot oil, leaving some space between them.
Step 7
Fry Until Golden and Crispy: Fry the sweet potato pancakes for about 3-4 minutes per side, or until they are golden brown and crispy. Adjust the heat to medium-low if they start to brown too quickly. Once cooked, remove them from the pan and place them on a paper towel-lined plate to absorb any excess oil. This will ensure they stay extra crispy.
