Cooking Instructions

Step 1

Wash the sweet potatoes thoroughly. Cut them into uniform sticks, about 0.5cm to 1cm thick. It’s important not to cut them too thick, as this will prevent them from becoming crispy all the way through. Place the cut sweet potato sticks in a bowl of cold water for about 10 minutes to remove excess starch. This step ensures a crispier and cleaner taste after frying.

Step 2

Drain the sweet potato sticks from the water and pat them completely dry with paper towels. Thoroughly removing moisture is crucial; any remaining water can cause dangerous oil splattering and will prevent the sticks from frying to a perfect crisp. Take your time to ensure they are well-dried.

Step 3

Pour enough cooking oil into a deep pan or pot to fully submerge the sweet potato sticks. Heat the oil over medium-low heat. Avoid overheating; the oil temperature should be around 160-170°C (medium frying temperature). Adding the sweet potatoes to oil that’s too hot will burn the outside before the inside is cooked. Fry the sweet potato sticks gently, stirring occasionally to prevent sticking and ensure even cooking. Frying for a slightly longer time at this medium temperature will yield a crispier result.

Step 4

Once the sweet potato sticks start to turn golden brown, you can slightly increase the heat and continue frying until they achieve a deep, rich brown color. The darker the color, the sweeter and more flavorful they become. Remove the fried sweet potato sticks with a slotted spoon and drain them on a wire rack or paper towels. They are best enjoyed warm, offering a delightful contrast between a crispy exterior and a sweet, tender interior.
