  • Pork Belly 2 thick slices (approx. 300-400g)
  • 1 Onion (medium size)
  • A small bunch of Scallions (for garnish and flavor)
  • 1 Tbsp Minced Garlic
  • 2/3 Tbsp Minced Ginger (or 1/4 tsp ginger powder)
  • 1 Green Chili Pepper (for color and mild spice)
  • 1 Bird’s Eye Chili Pepper (adjust for spice level, optional)

Gganpung Sauce

  • 3 Tbsp Soy Sauce
  • 2 Tbsp Vinegar
  • 2 Tbsp Water
  • 1 Tbsp Sugar
  • A pinch of Black Pepper

Cooking Instructions

[Prepare Ingredients] First, wash all vegetables. Slice the onion thinly or dice it. Finely chop the scallions, green chili, and bird’s eye chili. Mince the garlic and ginger. If fresh ginger is unavailable, ginger powder can be used.

[Sear the Pork Belly] Heat a pan over medium heat. Sear the pork belly slices on both sides until golden brown. It’s important not to cook them too crispy; aim for about 90% cooked so they remain juicy inside. Once seared, cut the pork belly into bite-sized pieces and set aside on a plate.

[Make the Sauce] Using the rendered fat from cooking the pork belly in the same pan, heat it over medium heat. Add the minced garlic and minced ginger, and stir-fry until fragrant. Then, add all the Gganpung sauce ingredients (soy sauce, vinegar, water, sugar, and black pepper) to the pan and mix well. Bring the sauce to a simmer.

[Stir-fry with Vegetables and Pork] Once the sauce is simmering, add the sliced onions and stir-fry until they become slightly translucent. When the onions are partially cooked, return the seared pork belly to the pan and stir-fry everything together.
