  • 1 Tbsp honey (or adjust to taste)
  • 80ml heavy cream (or milk)

1. Prepare and Boil Sweet Potatoes: First, wash the 4 sweet potatoes thoroughly to remove any dirt. Place them in a pot and cover with water. Bring the water to a boil over high heat. Once boiling, add all the sweet potatoes. Boil with the lid off for 15 minutes, then cover and continue to boil for another 20 minutes. Boiling for a total of about 35 minutes will ensure they are tender.

2. Mash Sweet Potatoes: While the sweet potatoes are still hot, peel off their skins. Place them in a large bowl and mash them thoroughly with a fork until smooth and free of lumps. Be careful as they will be hot.

3. Make Sweet Potato Mousse: Add the mashed sweet potatoes to a blender along with 1 tablespoon of honey and 80ml of heavy cream. Blend until you achieve a smooth and creamy consistency. Using a blender will result in a much smoother mousse.

4. Chill the Sweet Potato Mousse: Leave the blended sweet potato mousse in the blender bowl and refrigerate for at least 30 minutes. This resting period will help thicken the mousse, making it easier to fill the pie without it becoming runny.

TIP! The consistency of the mousse may vary depending on the moisture content of your sweet potatoes. If it’s too thin, add a little more heavy cream or milk to reach your desired thickness. You can also substitute honey with corn syrup.

5. Prepare the Bread: Trim the crusts off the 9 slices of bread using a sharp knife. Then, use a rolling pin to flatten each slice of bread until it’s thin and even. The thinner the bread, the crispier and more delicious your pie will be.

6. Shape the Pie (Step 1): Place about 1 tablespoon of the prepared sweet potato mousse in the center of one flattened bread slice. Then, brush the edges of another bread slice with egg yolk. The egg yolk acts as an adhesive to help the bread slices stick together.

7. Shape the Pie (Step 2): Fold the bread slice with the mousse in half to create a semi-circle. Press the edges firmly with a fork to seal them. This ensures that the filling won’t leak out during baking.

8. Brush with Egg Wash and Score: Lightly brush the top of each pie with egg yolk for a golden-brown finish when baked. To prevent the pies from puffing up too much and to create a decorative appearance, make 2-3 shallow slits on the top surface with a knife.
