Ingredients

  • 1/2 medium Korean radish (approx. 600g)
  • 4 Tbsp fine gochugaru (Korean chili flakes)
  • 3 Tbsp plum extract (maesilcheong)
  • 1 Tbsp soup soy sauce (or 1/2 Tbsp salt)
  • 1 Tbsp sugar
  • 1/2 Tbsp salted shrimp, finely minced
  • 1 Tbsp minced garlic
  • 2 stalks scallions (green onions), thinly sliced
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, wash the radish thoroughly, peel it, and then cut it into thin strips about 3-5mm thick. Place the julienned radish in a bowl, add 1 tablespoon of coarse salt, and gently mix. Let it sit for about 15 minutes to salt and tenderize. You’ll notice the radish releases water and softens. Gently squeeze out the excess water by hand. Be careful not to squeeze too hard, as this can reduce the radish’s crispiness. The water released from the radish is flavorful and can be reserved to add extra depth to the salad if desired.

To the salted radish, add 4 tablespoons of fine gochugaru and mix well to coat the radish with a vibrant red color. This step helps the radish absorb the seasoning better. Next, add 1 tablespoon of minced garlic, 1 tablespoon of sugar, 3 tablespoons of plum extract, and the finely minced salted shrimp. The salted shrimp adds a wonderful umami and depth of flavor. Instead of using vinegar, we’re relying on the plum extract for a pleasant tanginess. If plum extract is unavailable, you can substitute with an equal mix of sugar and vinegar.

Add all the seasoning ingredients to the radish and gently mix everything together with your hands, ensuring the seasoning is evenly distributed. Once the seasoning is well incorporated, add the thinly sliced scallions and toasted sesame seeds. Give it one last gentle toss. The refreshing aroma of the scallions and the nutty flavor of the sesame seeds will complete your delicious Mu Saeng Chae. While it’s delicious served immediately, chilling it in the refrigerator for a while will enhance its crispiness and refreshing taste.
