Main Ingredients- 1 pack of pre-portioned chicken for grilling (boneless chicken breast or thigh)

- All-purpose flour or tempura flour, as needed
- Breadcrumbs, as needed
- Dried parsley flakes, for garnish (optional)

- Tonkatsu (pork cutlet) sauce, as needed
Cooking Instructions
Step 1
To effectively remove any gamey odor from the chicken, first soak the pre-portioned chicken pieces in milk for 20-30 minutes. This crucial step helps to neutralize any unwanted smells, ensuring a cleaner and more enjoyable flavor for your chicken cutlets.
Step 2
After soaking, carefully pat the chicken dry with paper towels. It’s essential to remove as much moisture as possible, as excess water can prevent the coating from adhering properly and result in a less crispy texture.
Step 3
Now it’s time to season the chicken. Sprinkle generously with herb salt (or regular salt and pepper). Then, use the back of a knife or a meat mallet to gently pound the chicken pieces. This tenderizing process will make the meat incredibly soft and succulent when cooked.
Step 4
Prepare the egg wash for the coating. Crack 2 to 3 eggs into a bowl, depending on the amount of chicken you’re using, and whisk them thoroughly until well combined and smooth.
Step 5
Lightly coat the prepared chicken pieces with all-purpose flour or tempura flour. Avoid applying too thick a layer, as this can make the cutlet taste doughy. Tap off any excess flour to ensure a thin, even coating.
Step 6
Next, dip the floured chicken into the egg wash, ensuring it’s fully coated. Immediately after, press the chicken into the breadcrumbs, coating all sides evenly. Pressing gently helps the breadcrumbs adhere well, preventing them from falling off during frying and ensuring a wonderfully crispy crust. You can mix dried parsley flakes into the breadcrumbs for extra flavor and visual appeal.
Step 7
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the oil is hot (a breadcrumb should sizzle immediately when dropped in), carefully place the breaded chicken cutlets into the pan. Fry them, turning occasionally, until both sides are golden brown and perfectly crispy. Be mindful not to overheat the oil, which can lead to burnt exteriors and undercooked insides.
Step 8
Once golden and crisp, transfer the chicken cutlets to a plate lined with paper towels to absorb excess oil. Let them cool slightly, then cut into desired portions. Serve warm with your favorite tonkatsu sauce for a delightful homemade meal!
Step 9
The result is a batch of homemade chicken cutlets with a beautifully golden, crispy exterior and a wonderfully juicy, tender interior. They look as good as they taste!
Step 10
Dipped into the warm tonkatsu sauce, each bite is a perfect combination of that satisfying crunch and the incredibly moist, flavorful chicken. It’s a testament to how delicious homemade can be!
