Main Ingredients
- 2 Sole fillets, cleaned (or as desired)
- 3-4 Tbsp potato starch (or flour)
- Generous amount of cooking oil
- 1 Tbsp soy sauce (adjust to taste)
- 1/4 Lemon (optional)
Cooking Instructions
Step 1
Prepare 2 fresh sole fillets. Since they were pre-cleaned at the market, simply rinse them lightly under running water and pat them dry. To reduce any fishy smell and ensure even cooking, make 2-3 shallow cuts about 1-1.5 cm apart on both sides of the fish. Be careful not to cut too deep.
Step 2
Spread a generous amount of potato starch on a wide plate. Coat both sides of the scored sole fillets evenly with the starch. Using potato starch will create a crispy texture similar to batter; you can also use flour. Lightly tap the fish to ensure the starch adheres well.
Step 3
Heat a generous amount of cooking oil in a frying pan over medium-low heat. Carefully place the starch-coated sole fillets in the hot oil. Pan-fry them slowly, turning occasionally, until both sides are golden brown and crispy. It’s important to manage the heat so the fish cooks through evenly. Once crispy, remove from the pan. For extra flavor, you can drizzle with soy sauce or a squeeze of lemon juice.
