Known as ‘water spinach’ due to its hollow stems, this popular Southeast Asian vegetable is also affectionately called ‘morning glory’. It’s packed with dietary fiber, making it a healthy choice. Here, we’ve added tender chicken breast to boost protein intake. Water spinach pairs wonderfully with pork or beef as well, and its delightful crispiness makes it delicious on its own. Main Ingredients

  • Water Spinach (Morning Glory) 300g
  • Chicken Breast 250g
  • Onion 1/2
  • Enoki Mushrooms 1 pack

Seasoning

  • Soy Sauce 2 Tbsp
  • Oyster Sauce 2 Tbsp
  • Minced Garlic 1 Tbsp
  • Sesame Seeds to taste

Cooking Instructions

Step 1

First, prepare 300g of water spinach (morning glory). Wash it thoroughly under running water to remove any dirt or debris. Shake off excess water and cut it into bite-sized pieces, about 3-4 cm long. Keeping both the stems and leaves ensures a variety of textures.

Slice 1/2 onion thickly. For the enoki mushrooms (1 pack), trim the base and gently rinse them under running water. If the mushrooms are large, you can halve them.

Rinse the 250g chicken breast and pat it dry. Cut it into cube shapes, about bite-sized. Trim off any excess fat or sinew.

Heat 1-2 Tbsp of cooking oil in a preheated frying pan. Add the chicken breast and stir-fry until it turns opaque. Add 1 Tbsp minced garlic and 2 Tbsp soy sauce, and continue to cook until the chicken is fully cooked. Then, add the sliced onion and enoki mushrooms, stir-frying until the vegetables are slightly softened. Finally, add 2 Tbsp oyster sauce and mix well to coat everything.

Now, add the prepared water spinach to the pan. Stir-fry quickly over high heat for about 1-2 minutes to keep it crisp. Avoid overcooking, as it can become mushy. (If you’re using red chili peppers for color, add them at this stage.)
