Decadent Crumbly Brownies
Indulge in the ultimate treat: rich, fudgy brownies crowned with a generous, crunchy streusel topping! These brownies are a delightful combination of chewy chocolate goodness and a sweet, buttery crumble, perfect for any occasion.
For the Brownie Batter- 40g low-gluten flour (cake flour)
- 10g almond flour
- 20g cocoa powder
- 110g unsalted butter, softened to room temperature
- 110g granulated sugar
- 2 large eggs, at room temperature
- 50g dark couverture chocolate, for melting
- 40g milk couverture chocolate, for melting
- 1 tsp vanilla extract (optional)
Cooking Instructions
Step 1
Let’s start by preparing the brownie batter. In a mixing bowl, cream together the softened butter until smooth. Gradually add the granulated sugar in two or three additions, beating well after each addition until light and fluffy. Ensure the sugar is well incorporated into the butter.

Next, add the room temperature eggs one at a time, beating vigorously after each addition until fully combined and the mixture is emulsified. Make sure the eggs are at room temperature to prevent the batter from separating. Whisk until the mixture is smooth and well-blended.
Step 3
Stir in the vanilla extract for an extra layer of flavor. If you don’t have vanilla extract, you can omit it, but it does enhance the chocolate flavor and helps mask any eggy smell.
Step 4
Melt the dark and milk couverture chocolates together. You can do this by placing them in a heatproof bowl set over a saucepan of simmering water (double boiler method), stirring until smooth. Once melted, pour the chocolate into the batter bowl and gently fold it in with a spatula until just combined. Be careful not to overmix.
Step 5
Sift the cake flour, almond flour, and cocoa powder directly into the batter. Gently fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain. Be careful not to overmix, as this can make the brownies tough. Pour the batter into a baking pan lined with parchment paper (approximately 20×20 cm or 8×8 inches), spreading it evenly. Generously sprinkle the streusel topping over the batter, covering the surface. You can also add a few chocolate chips on top if you like. Bake in a preheated oven at 170°C (340°F) for about 20 minutes.
Step 6
After 20 minutes, your brownies should be ready! They will have a beautiful golden-brown streusel topping. Mine got a little extra sprinkle of chocolate chips on top, which is entirely optional but adds a lovely touch of shine and extra chocolatey crunch.
Step 7
The brownies are baked in a square pan, about 20cm by 20cm. While they might look quite large, the rich chocolate flavor means you’ll likely enjoy them in moderation! It’s best to let the brownies cool slightly until they are just warm before slicing. Use a sharp knife or bread knife to cut them into your desired portion sizes. Aim for a thickness that is neither too thin nor too thick, allowing you to fully savor the rich chocolate flavor. Now, enjoy your delicious creation!
