A Simple and Delicious Fried Rice with Crunchy Bean Sprouts and Kimchi

Let’s make a simple and flavorful fried rice featuring the delightful crunch of bean sprouts and the tangy zest of aged kimchi. This dish is not only satisfying as a meal but also incredibly easy to prepare, perfect for busy days. The addition of fresh perilla leaves and nutty sesame oil elevates its aroma and taste!
Core Ingredients- 2/3 bowl warm cooked rice
- 1 handful fresh bean sprouts (approx. 50g)
- 3-4 sheets well-fermented aged kimchi, finely chopped (approx. 100g)
- A small amount of fresh perilla leaves, thinly sliced (for garnish and aroma)
- A pinch of toasted sesame seeds (for finishing)
Seasoning & Flavor Boosters- 1.5 Tbsp perilla oil (for stir-frying)
- 1 tsp gochujang (Korean chili paste)
- 1 tsp oyster sauce
- 1 tsp oligo당 (corn syrup/isomaltose) or other sweetener (adjust to taste)

Cooking Instructions
Step 1
Heat 1 and 1/2 tablespoons of nutty perilla oil in a deep frying pan or pot over low heat. Let the oil gently release its aroma.

Arrange the washed bean sprouts evenly over the heated perilla oil. Allowing them to cook directly in the oil will help them retain their crisp texture.

Step 3
Add the finely chopped aged kimchi on top of the bean sprouts. Drizzle 1 tsp of gochujang, 1 tsp of oyster sauce, and 1 tsp of oligo당 (or your preferred sweetener) over the kimchi and bean sprouts to infuse them with flavor.

Step 4
Spoon the 2/3 bowl of warm cooked rice over the seasoned ingredients. Top with the thinly sliced fresh perilla leaves and sprinkle with toasted sesame seeds for a beautiful finish and added nuttiness.
