Step 1
First, prepare 3kg of fresh cabbage. Remove the outer leaves and wash the cabbage thoroughly. Then, using a knife, slice it into thin shreds about 0.5cm thick. It’s important to slice them thinly so the dressing can be absorbed well; if cut too thick, the flavors won’t meld properly. Place the shredded cabbage in a steamer basket over boiling water and steam lightly for about 3-5 minutes. Avoid steaming for too long, as it will become mushy and lose its crispness – a light steaming is key.
Step 2
While the cabbage is steaming, grind 500g of black sesame seeds into a fine powder using a blender or mortar and pestle. If using a blender, stop and restart intermittently to prevent it from overheating. We’ll mix this ground sesame with our delicious dressing. In a bowl, combine the finely ground black sesame seeds, 300g of sugar, 100g of salt (MSG-fortified), and 800g of mayonnaise. Mix thoroughly with a whisk or spatula until smooth and lump-free. You can taste the dressing and adjust the sugar or salt according to your preference.
Step 3
Remove the steamed cabbage from the steamer once it’s ready and let it cool slightly. Be careful not to mix the dressing while the cabbage is too hot, as the mayonnaise might separate. Add the slightly cooled cabbage to the prepared dressing bowl. Gently toss everything together, ensuring the cabbage is evenly coated with the dressing. It’s important to mix carefully to avoid breaking the cabbage shreds. And there you have it – a delicious cabbage salad!
