First, let’s prepare the ingredients for the rice bowl. You’ll need one block of firm tofu, half a green onion thinly sliced, and about a handful of dried shrimp. If you don’t have dried shrimp, shrimp powder can also be used.

Remove the tofu from its packaging. Using a knife, gently crush the tofu into chunks, or use a fork to mash it until it’s soft. It’s best to leave some small chunks for a better texture, rather than making it completely smooth.

Preheat a pan over medium-low heat and add about 2 tablespoons of cooking oil. Start by stir-frying the sliced green onions until they become fragrant. Once the aroma of the green onions is released, add the dried shrimp and stir-fry them well to enhance the flavor. Be careful not to burn the dried shrimp.

Add the crushed tofu to the fragrant stir-fried green onions and dried shrimp and lightly sauté. At this stage, it’s important to add 1/4 tablespoon of sugar and stir-fry until the moisture from the tofu evaporates. This helps prevent the tofu from clumping and maintains a fluffy texture.

Once the tofu is somewhat cooked, add 2 tablespoons of fish sauce (Kanari) to season. You can use soy sauce or salt for seasoning, but Kanari fish sauce adds a wonderful umami flavor. Finally, add 1 tablespoon of vinegar for a touch of tanginess.
