Cucumber Salad with Ssamjang
Super Simple Ssamjang Cucumber Salad – Ready in 5 Minutes!
I often stir-fry crisp cucumbers, but today I decided to quickly make a flavorful cucumber salad using ssamjang. It’s incredibly easy and fast to prepare, yet it truly captures the refreshing and aromatic essence of cucumbers, making it a perfect side dish that stimulates the appetite. It’s not spicy, so even children will love it! It’s an excellent accompaniment to rice or a simple snack with drinks.
Main Ingredients- 1 cucumber (preferably a light green Korean cucumber)
Seasoning- 1 Tbsp ssamjang (Korean fermented soybean paste)
- 1 tsp minced garlic (adjust to taste)
- 1/2 Tbsp toasted sesame seeds or sesame seed powder
- 1/2 Tbsp sesame oil

Cooking Instructions
Step 1
Prepare one fresh, light green Korean cucumber. Using the peel will enhance its flavor and texture.

Wash the cucumber thoroughly under running water. Then, cut it in half lengthwise. Next, use the flat side of your knife (the back of the blade) to gently tap and flatten the cut surface of the cucumber. This action helps the cucumber absorb the seasoning evenly and releases its fresh aroma.
Step 3
If you’re serving this to children or prefer smaller pieces, you can trim any excessively large or flattened sections with a knife. This step is optional and can be adjusted based on your preference.
Step 4
In a bowl, combine the prepared cucumber with 1 Tbsp of ssamjang, 1 tsp of minced garlic, 1/2 Tbsp of sesame oil, and 1/2 Tbsp of toasted sesame seeds. Gently mix everything together with your hands or a spoon until well combined. The savory flavor of the store-bought ssamjang creates a delicious salad without the need for additional seasonings. Taste and add a little more ssamjang if you find it too mild.
