Regular chives tend to wilt quickly and often, when a bunch is bought, too much goes to waste. However, cultivated chives stay fresh longer and are easy to store, making them a perfect side dish for grilled meats.   • Cultivated chives 110g (approx. 1.5 handfuls)
  • Red onion 1/4 (thinly sliced)
  • Carrot 1/4 (thinly sliced)
  • Minced garlic 1/2 Tbsp

Seasoning Ingredients
  • Soy sauce 3 Tbsp
  • Gochugaru (Korean chili flakes) 1.5 Tbsp
  • Sugar 1.5 Tbsp
  • Oligosaccharide or corn syrup 1 Tbsp
  • Sesame oil 1 Tbsp
  • Toasted sesame seeds a pinch (for garnish)

Cooking Instructions

Step 1

First, wash the cultivated chives thoroughly under running water. It’s important to rinse them carefully to ensure no dirt or debris remains.

Step 2

After washing, place the cultivated chives in a colander to drain completely. Excess water can prevent the seasoning from adhering well and dilute the flavor. Prepare the other vegetables: thinly slice the red onion and julienne the carrot. Measure out the minced garlic.

Step 3

Now, let’s make the delicious seasoning! In a bowl, combine 3 Tbsp soy sauce, 1.5 Tbsp gochugaru, 1.5 Tbsp sugar, 1 Tbsp oligosaccharide (or syrup), and 1 Tbsp sesame oil. Mix them well. If you prefer a deeper savory flavor, you can add about half a tablespoon of anchovy sauce. (I tend to cook with less salt, so I use this amount.)

Step 4

Add the drained cultivated chives, sliced red onion, julienned carrot, and minced garlic to the bowl with the seasoning. Gently toss everything together to ensure the chives are evenly coated with the dressing. Be careful not to toss too vigorously, as this can break the chives. Finally, sprinkle with toasted sesame seeds. Your simple yet flavorful cultivated chives salad is ready! Isn’t it easy?
