Let’s make some delicious curry after a long time! When the kids were little, I used to make it often to get them to eat vegetables. But after a while, they started saying, ‘Curry again?’. So, after a good break, I’m cooking it again. This recipe is a special way to enjoy curry with healthy and tasty pan-fried tofu.
Ingredients- 2 medium potatoes
- 1/2 onion
- 200g Spam
- 1/3 carrot
- 1/4 zucchini
- 4 blocks firm curry roux (for 4 servings)
- 3 cups water
Cooking Instructions
Step 1
Prepare all the vegetables (potatoes, onion, carrot, zucchini) and Spam by washing or peeling them, then chopping them into bite-sized, uniform pieces. Cutting them this way ensures they cook evenly, making the dish even tastier.
Step 2
Heat a generous amount of cooking oil in a pan. Start by sautéing the firmer vegetables, the carrot and potatoes. Sauté for about 2-3 minutes over medium heat; this process brings out the natural sweetness of the vegetables and adds a nutty aroma.
Step 3
Once the potatoes and carrots are slightly tender, add the remaining vegetables (onion, zucchini) and Spam. Sauté everything together until the vegetables soften. Cooking them together develops a deeper flavor profile.
Step 4
After the vegetables and Spam have been sufficiently sautéed, pour in 3 cups of water. Gently scrape the bottom of the pan to incorporate any delicious bits stuck there; this will make the curry base even richer.
Step 5
Once the water comes to a boil, add the 4 blocks of firm curry roux. Stir gently with a spatula or ladle to dissolve the curry completely, ensuring there are no lumps. Reduce the heat to medium-low during this step.
Step 6
As the curry dissolves and starts to thicken, reduce the heat to low and simmer for another 5-10 minutes. The curry is ready when it reaches a slightly thick consistency and the flavors have melded beautifully with the ingredients. Stir occasionally to prevent sticking.
Step 7
Serve the delicious, freshly made curry over a bowl of warm rice. It makes for a satisfying meal. You can enhance the flavor further by serving it with kimchi or pickled radish, according to your preference.

For those on a diet or seeking a different approach, cut the tofu into desired pieces and pat them dry with paper towels. Lightly brush both sides with cooking oil. Air fry at 180°C (356°F) for 8 minutes, then flip and air fry for another 5 minutes until the tofu is crispy on the outside and tender on the inside.
