Step 1

First, peel the potatoes and then cut them into thin matchsticks, suitable for easy eating. Cutting them to a consistent thickness will ensure they cook evenly.

Place the cut potatoes into boiling water and blanch them briefly. As soon as the water boils, turn off the heat, cover the pot, and let them steam for about 3 minutes. Then, drain the potatoes in a colander without rinsing them with cold water. This method makes the potatoes tender yet prevents them from falling apart during stir-frying.

While the potatoes are draining, thinly slice the onion and julienne the carrot. Make sure to cut the carrot much thinner than the potatoes. This ensures the carrot cooks quickly and maintains a pleasant texture alongside the potatoes.
