A Unique Curry Spaghetti Recipe That Breaks the Mold

Essential Ingredients- 1 serving Pasta Noodles
- 1 large Potato
- 160g Pork Tenderloin
- 1 Mushroom (e.g., King Oyster)
- 1/2 Carrot
- 1/4 Onion
- 1 stalk Green Onion
Cooking Instructions
Step 1
Wash all the vegetables thoroughly under running water and prepare them. Fresh ingredients are the foundation of delicious cooking.
Step 2
Peel the potato and dice it into small, about 1cm pieces. If you chop them too finely, they might lose some texture when cooked, so aim for a bite-sized cut.
Step 3
Dice the carrot and mushroom into similar small, about 1cm pieces, just like the potato. The mushrooms will add a delightful chewy texture.
Step 4
Slice the onion into about 1cm strips and diagonally cut the green onion. Cutting the vegetables into similar sizes will make the dish look more appealing.
Step 5
Cut the pork tenderloin into 1cm pieces. Place it in a bowl, add cooking sake, black pepper, and ginger powder, and gently mix to marinate. This will tenderize the meat and remove any unwanted odor.
Step 6
Heat about 1 tablespoon of canola oil in a deep pan (a wok is recommended). Add the diced potatoes and sauté for 2-3 minutes over medium heat. This step lightly coats the potatoes with oil. (Tip: To save time, you can start boiling the pasta noodles in water at this point).
Step 7
Once the potatoes are slightly sautéed, add the sliced mushrooms and carrots. Continue to sauté for another 1-2 minutes. This helps to bring out the natural sweetness of the vegetables.
Step 8
Clean the pan or use a separate one. Add a little canola oil and sauté the minced garlic over low heat until fragrant. Be careful not to burn the garlic.
Step 9
Once the garlic is fragrant, add the marinated pork tenderloin. Increase the heat to high and stir-fry until the surface of the pork is no longer pink. Break up any clumps of meat as you stir-fry.
Step 10
When the pork is browned, pour in 5 cups (approx. 1L) of water. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 5 minutes. Then, lower the heat to low and continue simmering for another 10 minutes. Skim off any foam or excess oil that rises to the surface for a cleaner sauce.
Step 11
Now, add the key ingredient for the sauce: 4 cubes of solid curry roux. If using curry powder, adjust the amount according to the package instructions.
Step 12
Stir continuously over low heat for about 10 minutes until the curry roux dissolves and the sauce thickens. The flavors will meld together and coat the ingredients. Stirring occasionally prevents sticking.
Step 13
In a separate pot, bring plenty of water to a boil. Add a pinch of salt (about 1 teaspoon per liter of water) and cook 1 serving of pasta noodles. Reserve some of the pasta cooking water (pasta water); it’s useful for adjusting the sauce consistency later.
Step 14
For this recipe, we’ve cooked the noodles for about 17 minutes, assuming a slightly thicker pasta than standard spaghetti. Cooking times can vary depending on the thickness and type of pasta, so refer to the package instructions or adjust to your preference.

Drain the cooked pasta noodles in a colander. Gently toss them to prevent sticking.
Step 16
Arrange the drained pasta noodles attractively in a deep bowl. You can twirl the noodles to create a nice presentation.

Generously spoon the warm curry sauce over the pasta noodles. Ensure the rich curry sauce coats the noodles well.
Step 18
