Dandelion Tofu Salad
A refreshing Dandelion Tofu Salad drizzled with a sweet and tangy pineapple dressing. It’s a light yet satisfying dish perfect for a healthy meal.
Salad Ingredients
- 1 head of fresh dandelion greens (cleaned and prepared)
- 170g firm tofu (1 block)
- 1 Tbsp olive oil (for pan-frying tofu)
Tofu Seasoning
- A pinch of herb salt (for sprinkling on tofu)
Pineapple Dressing
- 3 slices of pineapple (canned or fresh)
- 1 Tbsp vinegar (apple cider or rice vinegar recommended)
- 1 Tbsp sugar (honey or agave syrup can be substituted)
- 1 tsp olive oil (for dressing smoothness and shine)

Cooking Instructions
Step 1
First, cut the tofu into bite-sized cubes, about 2-3 cm square. Thoroughly wash the dandelion greens, remove excess water, and then tear or cut them into a pleasing size. Avoid cutting them too small, as this can diminish the texture. Set both aside.
Step 2
Let’s make the refreshing pineapple dressing! Combine the pineapple slices, 1 Tbsp vinegar, 1 Tbsp sugar, and 1 tsp olive oil in a blender. Blend until smooth and well combined, creating a luscious dressing.
Step 3
Heat 1 Tbsp of olive oil in a non-stick pan over medium heat. Add the prepared tofu cubes and pan-fry them, turning to ensure all sides are golden brown and slightly crispy. Once nicely browned, transfer the tofu to a plate lined with paper towels to absorb any excess oil. Lightly sprinkle with herb salt for seasoning.
Step 4
For the best flavor and texture, aim for a light golden brown sear on the tofu rather than a deep, dark crisp. This method preserves the tofu’s tender interior while providing a satisfyingly nutty exterior. Over-browning can lead to a less pleasant taste and texture.
Step 5
Arrange the prepared dandelion greens and pan-fried tofu on a serving plate. Drizzle generously with the homemade pineapple dressing just before serving. This simple assembly creates a beautiful and delicious salad.
Step 6
Alternatively, you can toss the dandelion greens with the dressing separately before plating. Then, arrange the dressed greens on the plate, top with the pan-fried tofu, and add a little extra dressing over the tofu. This allows the slight bitterness of the dandelion to meld beautifully with the sweet and tangy dressing.
