Noodle Ingredients

  • 1 package store-bought udon noodles
  • 1 small handful glass noodles (about 50g)

Vegetable Ingredients

  • 1/2 onion, thinly sliced
  • 1/2 pack enoki mushrooms, trim the base and separate strands

Cooking Instructions

Step 1

First, prepare the main components: the udon noodles and glass noodles. Bring a pot of water to a boil and cook both types of noodles until they are about 80% cooked. It’s important not to overcook them, as they will continue to cook when stir-fried. Remove them from the boiling water slightly undercooked.

Step 1

Step 2

Immediately rinse the cooked noodles under cold running water. This step rapidly cools them down and enhances their chewy and firm texture, making each bite delightfully springy.

Step 2

Step 3

Heat a frying pan over medium heat and add a little cooking oil. Sauté the sliced onions until they become translucent. (While original Dasom Noodles recipes don’t typically include onions, we’ve added them here for a richer texture and a hint of sweetness. Feel free to adjust or omit them based on your preference.)

Step 3

Step 4

Once the onions are slightly softened, add the separated enoki mushrooms to the pan and stir-fry them along with the onions until they wilt.

Step 4

Step 5

Now, add the chewy udon noodles and glass noodles to the frying pan along with the sautéed onions and enoki mushrooms. Stir everything together gently to ensure all ingredients are evenly combined and lightly stir-fried.

Step 5

Step 6

Finally, pour in the liquid soup base that came with the udon noodles. Stir-fry once more to coat everything evenly with the sauce. Your delicious Dasom Noodles are now ready! Enjoy them while they are hot.
