Dough Ingredients- 115g Dark Chocolate (high quality recommended)
- 115g Butter
- 1 large Egg
- 2/3 tsp Vanilla Extract
- 150g Unrefined Brown Sugar (Muscovado Sugar)
- 175g All-Purpose Flour (or equivalent)
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- Pinch of Salt
Coating- Powdered Sugar (Icing Sugar), as needed
- Powdered Sugar (Icing Sugar), as needed
Cooking Instructions
Step 1
In a large bowl, crack the egg and add the vanilla extract. Whisk vigorously until frothy. Gradually add the muscovado sugar and continue whisking until well combined.

Step 2
Pour in the melted chocolate and butter mixture in batches, whisking until just combined. The batter will be quite thin at this stage, which is perfectly normal.

Step 3
Sift the all-purpose flour, baking powder, baking soda, and salt into a separate bowl. Gently fold the dry ingredients into the wet ingredients using a rubber spatula until just combined. If the dough is too sticky to handle, cover it with plastic wrap and chill in the refrigerator for about 30 minutes before shaping.

Step 4
Once the dough is firm enough to roll, remove it from the refrigerator. Take walnut-sized portions of the dough and roll them into balls. Generously coat each ball in powdered sugar, gently shaking off any excess. Place the coated balls on a baking sheet, ensuring ample space between them as they will spread during baking.

Step 5
Bake in a preheated oven at 200°C (400°F) for 10-12 minutes. Once baked, let the biscuits cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely. This process will ensure a wonderfully crisp exterior and a chewy interior.
