- 200g walnuts, coarsely chopped
- 100g unsalted butter
- 140g corn syrup (or glucose syrup)
- 80g granulated sugar
- 4 large eggs, at room temperature
Cooking Instructions
Step 1
First, let’s prepare the pie dough. In a bowl, cream the softened butter until smooth and fluffy. Then, sift in the powdered sugar and mix until well combined.
Step 2
Add the room-temperature egg and quickly whisk everything together. It’s crucial to mix rapidly to prevent the mixture from separating. If it starts to curdle, you can add a little of the sifted cake flour to help bring it back together.
Step 3
Sift the cake flour into the bowl. Using a spatula, gently fold the flour into the butter mixture using a ’11’ shape motion until just combined. Be careful not to overmix, as this can make the pie crust tough.
Step 4
Wrap the dough in plastic wrap or place it in an airtight container and refrigerate for at least 30 minutes to 1 hour. This chilling period makes the dough firm and easier to handle.
Step 5
Once chilled, roll out the dough and line your pie dish, or press it into the dish with your fingers. Prick the bottom of the crust all over with a fork (this is called ‘docking’ and prevents puffing). Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until lightly golden. Let the pre-baked crust cool completely.
Step 6
While the pie crust is baking, let’s make the walnut filling. In a saucepan, combine the butter, corn syrup, and granulated sugar. Heat over medium-low heat, stirring constantly, until the butter is completely melted and the sugar has dissolved.
Step 7
In a separate bowl, whisk the 4 room-temperature eggs until lightly beaten. Avoid creating too much foam.
Step 8
Slowly pour the completely cooled butter mixture into the beaten eggs while whisking continuously and rapidly. This is important to temper the eggs and prevent them from scrambling. Ensure the syrup mixture is fully cooled before combining with the eggs.
Step 9
Stir in the coarsely chopped walnuts into the filling mixture. Keeping some texture from the walnuts is nice, so avoid chopping them too finely.
Step 10
Carefully pour the prepared walnut filling into the pre-baked and cooled pie shell. Bake in the preheated oven at 180°C (350°F) for approximately 25 minutes, or until the filling is set and lightly golden on top. Once removed from the oven, allow the pie to cool completely before slicing and serving for the best texture and flavor.
