Main Ingredients- Kalguksu noodles, 1.5 servings
- 1/3 Zucchini
- Carrots, a small amount
- 1 Shiitake mushroom
- 1/2 Onion
Seasoning- 0.5 Tbsp minced garlic
- 1.5 Tbsp soup soy sauce (guk-ganjang)

Cooking Instructions
Step 1
First, prepare the anchovy broth that will give your kalguksu its deep and refreshing flavor. In a pot, combine 1L of water, 1 handful of dried anchovies for broth, and 2 scallion roots. Bring to a boil. Once boiling, add 3 pieces of dried kelp and simmer for about 5 more minutes. Then, carefully remove and discard the kelp, anchovies, and scallion roots, leaving a clean broth.
Step 2
Prepare the vegetables that will add color and flavor to your kalguksu. Slice the zucchini into half-moons, and julienne the carrots and onion. Remove the stems from the shiitake mushrooms and slice them thinly. Feel free to substitute mushroom types or add other vegetables according to your preference.
Step 3
It’s important to achieve a chewy texture for the kalguksu noodles. Bring a pot of water to a rolling boil and add the kalguksu noodles. Cook for about 4 minutes. Gently stir the noodles occasionally to prevent them from sticking together.
Step 4
Add the prepared vegetables to the anchovy broth (after removing the solids). Cook until the vegetables are somewhat tender. Once the vegetables are cooking, add the pre-boiled kalguksu noodles and continue to cook them together. Finally, season the broth with 0.5 Tbsp of minced garlic and 1.5 Tbsp of soup soy sauce (guk-ganjang) to achieve a clean and balanced flavor. Adjust the amount of soup soy sauce to your taste.
