This is an easy yet highly successful recipe for Pork Kimchi Stew by Baek Jong-won. Instead of sautéing separately, you simply add water and pork to the pot and let it simmer. This method results in a delicious and deeply flavorful pork kimchi stew. Enjoy this comforting and rich stew tonight!
Ingredients- Pork belly or shoulder 1 cup (approx. 150g)
- Well-fermented ripe kimchi 3 cups (approx. 450g)
- Water 3 cups (approx. 750ml)
- Onion 1 (medium size)
- Cheongyang chili peppers 2
- Gochugaru (Korean chili flakes) 2 Tbsp
- Guk-ganjang (soup soy sauce) 1 Tbsp
- Saewujeot (salted shrimp) 1 Tbsp
- Green onion 1/2 stalk
- Minced garlic 1 Tbsp (optional, for enhanced flavor)
Cooking Instructions
Step 1
First, chop the kimchi into bite-sized pieces. Using very ripe, sour kimchi is recommended as it will make the stew’s broth much richer.
Step 2
Slice the green onion diagonally, and finely chop the Cheongyang chili peppers. Adjust the amount of chili peppers to your preference for spiciness.
Step 3
Cut the onion into thick slices or small squares. Cut the pork into bite-sized pieces, suitable for a stew.
Step 4
In a pot, combine 3 cups of water, the pork, and 1 Tbsp of saewujeot. Bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 10 to 20 minutes. Simmering for at least 10 minutes is recommended to remove any pork odor and develop the broth’s flavor.
Step 5
After simmering for 10-20 minutes, the amount of liquid will have reduced slightly. Now, add all the chopped kimchi to the pot. The kimchi will contribute greatly to the stew’s flavor.
Step 6
Now it’s time to add the seasonings that will give the kimchi stew its signature taste. Add 1 Tbsp of guk-ganjang and 2 Tbsp of gochugaru, and mix well.
