The star of today’s dish is this wild seaweed. While more expensive than conventionally farmed seaweed, its premium taste and the dedication of those who harvest it make it truly worthwhile. Wild seaweed boasts a depth of flavor incomparable to farmed varieties, making it perfect for special occasions or birthdays, creating an even more memorable meal for loved ones. Its secret lies in maintaining a wonderfully chewy texture even after prolonged cooking, a delight for both children and adults. Unlike farmed seaweed, wild seaweed doesn’t require prolonged soaking; a quick rinse is all it needs to unlock its exquisite flavor.

While I sometimes opt for the convenience of stir-frying beef and seaweed together, watching a cooking show featuring a recipe that properly extracts broth inspired me to make a truly exceptional beef and seaweed soup. The secret to a deep, rich broth begins with dedication.
Step 3
First, place the beef brisket, radish, apple, and green onions in a pot and bring to a boil over high heat. Once boiling, meticulously skim off any scum that rises to the surface. This crucial step removes any gamey odor from the beef and results in a much cleaner and clearer broth. This process is key to achieving a pristine soup base.
Step 4
When the broth has reduced by about half, remove the beef brisket and vegetables. This rich broth will serve as the foundation for the soup’s deep flavor. Slice the removed beef brisket against the grain into bite-sized pieces. While delicious on its own, I’ll be adding these back into the soup for a wonderfully hearty texture.

Dried wild seaweed is so tender it crumbles easily by hand, eliminating the need for knives. I’ll be stir-frying it directly today without soaking. While the exact amount is hard to pinpoint, two handfuls should provide a generous and delicious portion.

Place the rinsed wild seaweed in the pot along with 5 tablespoons of sesame oil and 1 tablespoon of minced garlic. Stir-fry over medium-low heat until fragrant. While some recipes suggest extensive stir-frying to eliminate any ‘fishy’ smell, wild seaweed has a very mild aroma, so stir-frying just until the garlic is fragrant is sufficient. Be careful not to burn the seaweed.
Step 7
Once the seaweed is sufficiently stir-fried, pour in the prepared beef brisket broth, add 1 tablespoon of Korean soy sauce and 1 tablespoon of fish sauce for initial seasoning. Bring to a boil over high heat, then reduce to low and simmer gently for 30 to 40 minutes. It’s best to adjust the final seasoning with salt after cooking, as this enhances the depth and subtlety of the flavor.

The longer this soup simmers on low heat, the more the wild seaweed releases its natural, pleasant sweetness and profound umami.
