  • Zucchini: 1/2

  • Green Onion: 1 stalk (approx. 1/4 of a large one)

Today, we’re using ‘Chungjungone Clam & Anchovy Doenjang Jjigae Sauce’ for our stew. My son, who lives alone, absolutely loves this flavor, so I make it often. With just this sauce, a delicious and savory doenjang jjigae is ready in a flash!

Let’s use up any leftover vegetables we have in the fridge, like zucchini, onion, green onion, and green chili peppers. Don’t forget the tofu!

Cut the tofu and prepared vegetables into bite-sized pieces, about 1.5cm cubes, so they blend well into the stew.

Pour 2 cups (approx. 400ml) of refreshing water into a pot. Dissolve the Chungjungone Clam & Anchovy Doenjang Jjigae Sauce into the water. This sauce is deeply flavored with clams and anchovies, making it incredibly delicious without needing a separate broth. It has a clean and rich taste.

Once the doenjang mixture starts to boil, add the onion, which adds sweetness, and the zucchini, for a tender texture. Simmer for about 3-4 minutes until the vegetables are slightly tender.

When the vegetables are partially cooked, add the green onions and green chili peppers for a spicy kick and fresh aroma. Bring to a rolling boil over high heat for just a moment – it doesn’t take long!

Finally, add the soft tofu. Gently stir to avoid breaking it, and let it simmer for another short while until the tofu is heated through. Your stew is ready!
