Main Ingredients- 100g King Crab Legs (or imitation crab sticks)
- 2 Fresh Eggs
- 1/2 pack Enoki Mushrooms
- 1/2 Onion
- 1/2 Scallion (Green Onion)
Broth & Seasoning- 500ml Water
- 1 Tbsp Soy Sauce (Jin Ganjang)
- 2 Tbsp Cornstarch Slurry (1 Tbsp cornstarch + 1 Tbsp water)
- A dash of Sesame Oil
- A dash of Brown Rice Oil or Cooking Oil
- 500ml Water
- 1 Tbsp Soy Sauce (Jin Ganjang)
- 2 Tbsp Cornstarch Slurry (1 Tbsp cornstarch + 1 Tbsp water)
- A dash of Sesame Oil
- A dash of Brown Rice Oil or Cooking Oil
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion and then cut it into three equal pieces. Trim the root end of the enoki mushrooms and separate them into smaller strands or chop them finely. Finely chop the scallions.
Step 2
Rinse the crab meat gently under cold water and drain it well. If using imitation crab sticks, shred them into smaller pieces.
Step 3
Crack the eggs into a bowl and whisk them until smooth using a fork or whisk.
Step 4
Heat a pot over medium heat and add a dash of brown rice oil or cooking oil. Add the chopped scallions and sauté until fragrant, creating a scallion-infused oil.
Step 5
Once the scallions are fragrant, add the sliced onions. Sauté until the onions become translucent and lightly golden, bringing out their natural sweetness.
Step 6
Add the enoki mushrooms to the pot and sauté along with the onions until they soften. Mix well to combine the flavors.
Step 7
Push the sautéed vegetables to one side of the pot. Pour 1 tablespoon of soy sauce into the empty space and let it bubble for a moment before stirring everything together. This helps to deepen the savory flavor.
Step 8
Pour in 500ml of water and bring it to a boil over high heat. Once boiling, add the crab meat and cook for about 1-2 minutes until it’s cooked through. Be careful not to overcook the crab, as it can become tough.
Step 9
Now, let’s adjust the soup’s consistency. In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water to create a slurry. Slowly pour the cornstarch slurry into the boiling soup while stirring continuously until it reaches your desired thickness. Reduce the heat to low once thickened.
Step 10
Finally, turn off the heat. Gently pour the whisked egg into the soup without stirring. Let it cook undisturbed for a moment, creating beautiful ribbons of egg. Just before serving, gently stir the soup to break up the cooked egg. A tiny drizzle of sesame oil at the end can enhance the aroma. Enjoy your delicious and comforting crab stick soup!
