Cookie Dough Ingredients- 90g unsalted butter, softened at room temperature

Cooking Instructions
Step 1
In a large bowl, cream the softened unsalted butter until smooth using a whisk or spatula. Then, add the granulated sugar and continue to whip until the mixture is well combined and has a pale, creamy color. This step is crucial for achieving a tender cookie texture.

Lightly whisk the room-temperature egg in a separate small bowl. Gradually add the beaten egg to the butter-sugar mixture in 2-3 additions, mixing thoroughly after each addition. Adding the egg too quickly can cause the mixture to separate, so it’s important to mix well until each addition is fully incorporated, maintaining a smooth, creamy consistency.

Sift the cake flour, matcha powder, and almond flour directly into the bowl with the wet ingredients. Sifting the dry ingredients ensures an even distribution and a finer texture for your cookies.

Using a spatula, gently fold the dry ingredients into the wet ingredients until just combined and no dry streaks remain. Be careful not to overmix, as this can lead to tough cookies. Mix only until the flour is incorporated.

Bake in a preheated oven at 170°C (340°F) for 10-12 minutes, or until lightly golden. Baking time may vary depending on your oven.

Once baked, carefully transfer the cookies to a wire rack to cool completely. After the cookies have cooled thoroughly, spread a thin layer of strawberry jam or your preferred jam onto the surface of the cookies without a cutout. Avoid using too much jam, as it may ooze out during assembly.
