Main Ingredients- 200g fresh garlic scapes
- 1 Tbsp coarse salt (for blanching)
- 1 Tbsp vinegar (for blanching)
Spicy & Sweet Seasoning- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp toasted sesame seeds
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Fill a pot generously with water and add 1 tablespoon of coarse salt and 1 tablespoon of vinegar. This helps to maintain the vibrant green color of the garlic scapes and aids in removing impurities.

Once the water reaches a rolling boil, add the prepared garlic scapes and blanch them for about 1 minute. Be careful not to overcook, as this will make them lose their crisp texture.

Immediately remove the blanched garlic scapes from the boiling water and rinse them thoroughly under cold running water to cool them down. This step is crucial for preserving their satisfying crunch. Drain them well in a colander.
