  • 1 cup water (200ml)

Seasoning Ingredients

  • 5 Tbsp soy sauce (75ml)
  • 2 Tbsp fish sauce (anchovy or sand lance, 30ml)
  • 2 Tbsp cooking wine (like Mirin, 30ml)
  • 2 Tbsp minced garlic (30g)
  • 2 Tbsp sugar (30g)
  • 1 Tbsp plum extract (15ml)
  • A little chopped green onion (for garnish)

First, peel the radish thoroughly. Then, slice it into thick, semi-circular or rectangular pieces, about 1.5 cm thick. Slicing them too thinly might cause them to break apart, so aim for a good thickness.

Prepare a wide pot or wok with a thick bottom. Arrange the sliced radish pieces on the bottom of the pot, making sure they don’t overlap too much. This layering helps the radish absorb the seasoning evenly.

Pour in 1 cup (200ml) of water, just enough to partially cover the radish. If you add too much water, the flavor might become diluted, so adjust the amount based on the thickness of your radish slices.

Now, let’s make the delicious seasoning sauce! Measure out 5 Tbsp soy sauce, 2 Tbsp fish sauce, 2 Tbsp cooking wine, 2 Tbsp minced garlic, 2 Tbsp sugar, and 1 Tbsp plum extract. Add all these ingredients to the pot. Give it a quick stir to combine the seasonings.
