I bought a popular brand of solid curry cubes from the supermarket and made curry rice at home. Once made, it lasts for several meals, which is incredibly convenient! If you’re making a smaller portion, simply adjust the ingredient quantities. This is a recipe that the whole family will love. Let’s get started!

Main Ingredients
  • 2 medium potatoes
  • 1 medium onion
  • 1/3 carrot
  • 1 handful beef (curry cut or stew meat)
  • 6 cups water (approx. 1.2 liters)

Seasoning & Spices
  • 4 cubes solid curry roux (follow package instructions)
  • 1 Tbsp honey
  • 1/3 Tbsp minced garlic
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the vegetables. Wash the potatoes, onion, and carrot thoroughly. Then, cut them into bite-sized cubes, roughly 1-inch pieces. Cutting them into similar sizes will ensure they cook evenly.

Step 2

Cut the beef into bite-sized pieces (about 1-inch). Season the beef with a pinch of salt and pepper to enhance its flavor.

Step 3

Now, let’s stir-fry. Heat a pot over medium heat and add 1-2 tablespoons of cooking oil. Add the minced garlic and sauté until fragrant. Then, add the beef, onion, carrot, and potatoes. Stir-fry everything together until the vegetables and beef are lightly browned. This step develops a richer flavor in the curry.

Step 4

Once the ingredients are nicely sautéed, pour in 6 cups (approx. 1.2 liters) of water. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 10-15 minutes, or until the potatoes and carrots are tender. Skim off any foam that rises to the surface for a clearer broth.

Step 5

This is the final step! Keep the heat on low. Add the 4 cubes of solid curry roux and stir gently until completely dissolved. It’s important to stir slowly to prevent lumps. Once the curry is dissolved, you can add 1 tablespoon of honey for a touch of sweetness, if desired. Continue simmering for another 2-3 minutes until the curry thickens to your preferred consistency. If you’re using powdered curry, dissolve it in cold water first before adding it to the pot. Serve the delicious curry generously over warm, steamed rice. Enjoy your homemade curry rice!
