  • 13 sheets of rice paper
  • 13 cocktail shrimp (or desired amount)
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 4 eggs
  • A little cooking oil (for sautéing)
  • 1/2 onion
  • 10 perilla leaves (or substitute with cabbage, lettuce, etc.)
  • 6 Tbsp chili sauce or peanut sauce (for dipping)

First, prepare the bell peppers and onion. Wash them thoroughly, remove the seeds, and julienne them thinly. If the onion is too pungent, you can soak it in cold water for about 5 minutes before draining and using to mellow its flavor.

Wash the perilla leaves and pat them dry. Julienne them finely. You can also lay them flat on the rice paper. Alternatively, feel free to use other fresh greens like cabbage or lettuce for a different texture and flavor.

Separate the egg yolks and whites. Pan-fry each into a thin omelet (jidan). If the yolks are too thick to spread easily, mix in about 1 teaspoon of water. Once cooled, slice the omelets into thin strips.

Heat a little cooking oil in a pan over medium heat. Add the shrimp and cook until they turn pink and opaque. If using large shrimp, cook them one by one. Smaller shrimp can be cooked in pairs. If you plan to cut a shrimp in half to use for two rolls, place it in the center of the pan while cooking so it’s easier to manage later.

Boil water in a kettle and pour it into a wide, shallow dish. Dip one sheet of rice paper into the hot water for about 3 seconds until it becomes pliable, then carefully remove it. Arrange your prepared ingredients (vegetables, shrimp, egg strips) onto the softened rice paper. Fold in the sides first, then tightly roll it up from the bottom. If the rice paper tears, don’t worry – you can carefully wrap it again; with practice, you’ll get the hang of it and avoid tears.
