First, cut the dried pollack strips into bite-sized pieces, about 5-7cm long. Place them in a bowl and lightly sprinkle with water. Let them sit for about 10 minutes to become moist. Be careful not to soak them for too long, as they can become too soft.

In a separate small bowl, combine the seasoning ingredients: 1 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp plum extract, 1 Tbsp oligosaccharide, 1 Tbsp soy sauce, and a splash of cooking wine (cooking wine helps remove any fishy odor and adds umami). Finally, add 1 tsp of sesame oil and mix everything thoroughly to create the sauce.

Gently squeeze out the excess water from the moistened dried pollack strips with your hands. Avoid squeezing too hard, as this can make them tough. Place the squeezed pollack strips into the bowl with the prepared sauce. Gently mix with your hands until the seasoning is evenly distributed. Taste and adjust the seasoning if needed, by adding a little more soy sauce or oligosaccharide, to your preference.
