The Perfect Hangover Soup: Easy Hwangtae Pollack and Radish Soup Recipe

Let’s learn how to make a wonderfully clear and flavorful Hwangtae (dried pollack) and radish soup. This is a comforting and delicious soup dish.
Ingredients- Dried Pollack (Hwangtae), prepared, 70g
- Korean Radish (Moo), 1/2 (approx. 300g)
- Green Onion (Scallion), 1 bunch (approx. 50g)
- Sesame Oil, 2 Tbsp
- Minced Garlic, 1 Tbsp
- Fish Sauce (or Korean Soup Soy Sauce), 1 Tbsp
- Salt, 1 tsp (for seasoning adjustment)
- Eggs, 2
- Broth (anchovy-kelp broth or rice water), 800ml (or plain water)
Cooking Instructions
Step 1
Let’s begin making this refreshing and delicious Hwangtae and radish soup. It’s a perfect soup for breakfast or to cure a hangover!

Step 2
First, soak the dried pollack in cold water for about 10 minutes until softened. Squeeze out any excess water and cut it into bite-sized pieces (about 3-4 cm). Heat 2 Tbsp of sesame oil in a pot over medium-low heat. Add the sliced radish and stir-fry for 3-4 minutes until it becomes slightly translucent. Once the radish is softened, add the rehydrated dried pollack and stir-fry together for another 2-3 minutes to enhance its savory flavor.

Step 3
When the radish and pollack are sufficiently stir-fried, pour in 800ml of prepared broth and bring to a boil over high heat. If you don’t have broth, plain water will also work. Once it boils, reduce the heat to medium and simmer for 5-7 minutes, allowing the radish to cook thoroughly and the flavors to meld.

Step 4
While the soup is simmering, add the chopped green onions and 1 Tbsp of fish sauce (or soup soy sauce) to season. After adding the fish sauce, the soup temperature might drop slightly, so wait for it to come back to a rolling boil. Once it’s boiling again, gently pour the 2 beaten eggs in a circular motion into the soup. Let the eggs cook without stirring until they are softly set and form ribbons.

Step 5
Finally, taste the soup and adjust the seasoning with salt if needed. Once the eggs are fully cooked and the green onions are tender, your delicious Hwangtae and radish soup is ready! Serve it warm with rice for a hearty and satisfying meal.
