- 0.5 tsp Minced ginger
- 1 Tbsp Mirin (cooking wine)
- 2 Tbsp Plum extract
- 1 Tbsp Oligodang (corn syrup)
- 1 tsp Soy sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced garlic
- 0.5 tsp Minced ginger
- 1 Tbsp Mirin (cooking wine)
- 2 Tbsp Plum extract
- 1 Tbsp Oligodang (corn syrup)
Cooking Instructions
Step 1
To prepare the squid, rub its skin with coarse salt to remove any impurities and the outer membrane. This ensures a cleaner texture and appearance for your dish.
Step 2
Peel and wash the onion thoroughly, then slice it thinly. Thinly sliced onions will integrate better with the squid when stir-fried.
Step 3
Trim and wash the green onion, then chop it into small pieces, about 0.5 cm thick. The fragrant green onion will enhance the overall flavor of the rice bowl.
Step 4
Cut the prepared squid into bite-sized pieces, approximately 1-2 cm in size. Avoid cutting them too small, as they might shrink significantly during cooking.
Step 5
In a bowl, combine 1 tsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp minced garlic, 0.5 tsp minced ginger, 1 Tbsp mirin, 2 Tbsp plum extract, and 1 Tbsp oligodang. Whisk everything together until the seasoning is well combined and smooth. This creates the perfect balance of spicy and sweet flavors!
Step 6
Add the prepared squid to the mixed seasoning and gently toss to coat. Let it marinate for about 10 minutes to allow the flavors to penetrate the squid, making it more delicious.
Step 7
Heat a pan with a generous amount of cooking oil. Add the chopped green onions and sliced onions first. Stir-fry over medium-low heat until fragrant, and the onions become translucent.
Step 8
Once the onions and green onions are sufficiently sautéed, add the marinated squid to the pan. Stir-fry quickly over high heat. Squid cooks fast; once it changes color, proceed to the next step to avoid overcooking and toughness.
Step 9
When the squid is almost cooked, pour in about 1 cup of water (using a paper cup as a measure). Bring it to a simmer. Adding water will mellow the spiciness and create a luscious sauce.
Step 10
Taste the stir-fried squid. If it’s not spicy enough, add another tablespoon of gochugaru and stir-fry briefly to finish. You can also adjust sweetness or saltiness with a little sugar or soy sauce, according to your preference.
Step 11
Firmly pack cooked rice into a rice bowl. Press down the rice to create a compact shape.
Step 12
Carefully invert the packed rice bowl onto a serving plate. Gently tap and rotate the bowl to release the rice, creating a neat, molded shape.
Step 13
Generously spoon the delicious stir-fried squid over the molded rice. Finish with a sprinkle of toasted sesame seeds for an extra nutty aroma and flavor. Your appetizing and tasty squid rice bowl is now complete! Enjoy your meal.
