Main Ingredients- 2 ripe tomatoes
- 1 bunch fresh chives
- 3 fresh eggs

First, wash the tomatoes thoroughly and pat them dry. Then, cut them into bite-sized pieces. If you prefer, you can remove the seeds for a cleaner texture.

Wash the chives under running water and cut them into approximately 4-5 cm lengths. You can chop them finer if you prefer, but this length works well for stir-frying with the tomatoes.

Crack the 3 eggs into a bowl. Add 4 tablespoons of milk to make the eggs wonderfully tender. Season with 1/2 teaspoon of black pepper to eliminate any eggy smell, and 1/2 teaspoon of salt and 1 teaspoon of sugar for balanced flavor. (Tip: For an extra savory kick, you can add about 1/2 tablespoon of oyster sauce, but it’s also delicious without it to preserve the original flavors.) Whisk everything together gently with a fork or whisk until well combined.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Olive oil will add a lovely aroma. Once the oil is hot, add the chopped tomatoes and stir-fry lightly for about 1 minute. Then, add 1 teaspoon of sugar and continue to cook for another minute until the tomatoes start to soften, which will enhance their sweetness.

Push the stir-fried tomatoes to one side of the pan, or temporarily remove them to a separate plate. This will create space for cooking the eggs.

Pour the prepared egg mixture into the empty side of the pan. As the eggs begin to set, gently stir them with chopsticks or a spatula, moving in one direction to create soft scrambled eggs. Avoid overcooking; aim for a tender, moist texture.
