Hello everyone! Today, I’ve brought a delicious recipe for stir-fried dried pollack that will make your dining table even more bountiful. We’ll be using some dried pollack I bought over the weekend to create a chewy yet tender side dish.

First, soak the dried pollack in cold water for about 10 minutes to soften it. This will prevent it from becoming tough when stir-fried and ensure a more moist texture.

Once softened, cut the dried pollack into bite-sized pieces, about 5cm long. Make sure to remove any tough, remaining bones. Squeeze out excess water thoroughly to prevent the dish from becoming watery when cooked.

Heat a pan with about 2 tablespoons of cooking oil over medium-low heat. Add the chopped green onions and slowly stir-fry until fragrant and lightly browned, creating green onion oil. Once the green onions are golden and aromatic, add the squeezed dried pollack and stir-fry. The most crucial step here is sugar coating! Add 1 tablespoon of sugar and quickly stir-fry to coat the surface of the dried pollack evenly. The sugar will create a coating that helps achieve a slightly chewy yet tender texture.

Now it’s time to season. In a small bowl, mix 1 tablespoon of oyster sauce and 1 tablespoon of soy sauce to create the seasoning. Add this sauce to the pan with the dried pollack and continue to stir-fry over medium heat for 2-3 minutes until the flavors are well combined. Be careful not to overcook, as this can make the pollack tough.
