Cooking Instructions

First, prepare your fresh ingredients. If you don’t have shiitake mushrooms, you can use aromatic king oyster mushrooms or chewy enoki mushrooms, or even omit them altogether. For the cabbage, soak it briefly in water with a splash of vinegar, then rinse thoroughly under running water. This helps to ensure it’s clean and fresh.

Slice the washed cabbage into bite-sized, flat pieces for a pleasant texture. Cut the flavorful bacon into manageable pieces, and thinly slice the aromatic shiitake mushrooms and crisp green onions.

Heat a pan with a little cooking oil and add the sliced green onions. Sauté until fragrant to create an aromatic base. Add the bacon and stir-fry until golden brown and crispy to enhance its flavor. Once the bacon is browned, add the shiitake mushrooms and sauté together. Cabbage releases water easily and wilts quickly, so once all other ingredients are partially cooked, add the cabbage and stir-fry rapidly over high heat. The key is to maintain its crispness!
