  • 1/2 bunch Spinach (approx. 150g)
  • 4 slices thick-cut Bacon
  • 1 fresh Egg

Seasoning & Garnish
  • 1 tsp Sesame oil
  • 0.5 tsp Salt or Soy Sauce (adjust to taste)
  • 0.5 tsp Minced garlic
  • Sesame seeds, for garnish (optional)

Cooking Instructions

Step 1

Rinse the spinach thoroughly and trim off any tough stems. Blanch the spinach in boiling water for about 1 minute, then immediately rinse under cold water. This helps preserve the vibrant green color and a crisp texture.

Step 2

Drain the blanched spinach well. You can use a colander or gently squeeze out the excess water by hand.

Step 3

Once the water is removed, finely chop the spinach. Chopping it into small, manageable pieces will make it easier for children to eat.

Step 4

In a bowl, combine the chopped spinach with 1 tsp sesame oil, 0.5 tsp minced garlic, 0.5 tsp salt (or soy sauce), and a pinch of sesame seeds if desired. Gently mix everything together. The garlic helps to cut through any potential gaminess of the spinach, enhancing the overall flavor.

Step 5

Place the warm cooked rice into a wide bowl.

Step 6

Add the seasoned spinach to the rice and mix gently until well combined. Ensure the spinach is evenly distributed throughout the rice.

Heat 1 tbsp of perilla oil or cooking oil in a pan over medium heat. Add the spinach and rice mixture and stir-fry until the rice grains become fluffy and slightly chewy. Avoid overcooking.

In a separate pan, lightly oil and cook the 4 slices of bacon until golden brown and crispy. The rendered bacon fat will add a wonderful depth of flavor to the fried rice.
