- Pinch of Black Pepper
- Pinch of Toasted Sesame Seeds
- 2 Tbsp Soy Sauce
- 1.5 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin or Cheongju)
- 1/2 Tbsp Sugar (adjust to taste)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
- Pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, let’s prepare the bean sprouts. Trim any wilted or discolored roots. Then, soak them in cold water briefly to refresh them, followed by a gentle rinse under running water. Drain them thoroughly. This process helps to make the bean sprouts extra crisp and delicious.
Step 2
Next, prepare the other vegetables. Thinly slice the carrot into matchsticks. Mince or thinly slice the garlic cloves to infuse flavor. Chop the scallion and Korean green chilies into bite-sized pieces. The green chilies add a spicy note, so feel free to adjust the quantity or omit them if you prefer it milder.
Step 3
Now, let’s make the flavorful sauce. In a small bowl, combine the soy sauce, oyster sauce, cooking wine, sugar, and a pinch of black pepper. Whisk everything together until well combined. Having the sauce pre-mixed makes the cooking process much smoother.
Step 4
Heat a pan over medium-low heat and add a generous amount of cooking oil. Add the sliced garlic and chopped scallion to the pan. Sauté them gently, being careful not to burn them, until they become fragrant. This step builds a wonderful aromatic base for the dish.
Step 5
Once the aromatics are fragrant, add the thinly sliced beef brisket to the pan. Sprinkle a little black pepper over the beef to help eliminate any gamey odors and enhance its flavor.
Step 6
Increase the heat to high. Stir-fry the beef brisket quickly, separating any clumps, until it’s just cooked through. Since the slices are thin, they will cook very fast.
Step 7
When the beef is nearly cooked, pour the prepared sauce over it. Reduce the heat to medium and continue to stir-fry for about 1-2 minutes, allowing the sauce to coat the beef evenly and meld the flavors. Make sure the sauce doesn’t burn.
Step 8
Once the beef and sauce are well combined, it’s time to add the vegetables. Add the julienned carrots, the well-drained bean sprouts, and the chopped green chilies to the pan.
Step 9
Turn the heat back up to high. Stir-fry the vegetables quickly, just until they are slightly wilted but still retain their crispness. Be careful not to overcook the bean sprouts, as they can become soggy. The key is to stir-fry everything together rapidly to combine the flavors while keeping the vegetables fresh.
Step 10
Finally, turn off the heat. Drizzle in the sesame oil and sprinkle with toasted sesame seeds for a finishing touch. Adding the sesame oil off the heat preserves its aromatic qualities. Give everything a final mix for a perfectly finished dish.
Step 11
And there you have it – a delicious Beef Brisket and Bean Sprout Stir-Fry! Serve it hot over rice for a complete meal, or enjoy it as a flavorful appetizer with your favorite drinks. You can also add other leftover vegetables to make it even more substantial.
