Delicious Braised Burdock Root: The Perfect Side Dish!

Burdock root is a fantastic banchan (side dish) that’s perfect for any meal! In season from January to March, burdock pairs wonderfully with pork, helping to neutralize any gamey flavors. It’s also a star ingredient for kimbap. I always make a large batch of this braised burdock because it disappears so quickly, even when stored in a large container. Let’s make this super simple and delicious burdock dish together!

Main Ingredients

  • 1200g shredded burdock root
  • 1 cup (200ml) soy sauce
  • 1.5 cups (300ml) corn syrup or rice syrup
  • 3.5 cups (700ml) water (or anchovy broth)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Start with preparing your ingredients. Using pre-shredded burdock root from the store makes it much easier. Rinse the burdock root gently under running water to remove any dirt or debris. Be careful not to wash too vigorously, as this can wash away its beneficial nutrients.

Step 1

Step 2

Lightly drain the washed burdock root. Since you’ll be cooking a large quantity, prepare a large wok or a deep pot. Add all the burdock root to the pot.

Step 2

Step 3

Now, let’s make the flavorful braising liquid! Add the 3.5 cups of water, 1.5 cups of corn syrup, and 1 cup of soy sauce to the pot. Bring it to a boil over high heat. Stirring once to combine the ingredients is a good idea.

Step 3

Step 4

Once the liquid comes to a rolling boil, reduce the heat to low. The process of slowly braising the burdock to absorb the flavors begins now.

Step 4

Step 5

Let the burdock simmer on low heat for 30 minutes. During this time, it’s crucial to stir the burdock occasionally with chopsticks or a spatula to prevent it from sticking to the bottom of the pot. This ensures even flavor distribution and prevents burning.

Step 5

Step 6

When the liquid has reduced to a glaze and the burdock is glossy, turn off the heat. Stir in 1 tablespoon of sesame oil. The nutty aroma of sesame oil will deepen the flavor of the braised burdock. Mix well.

Step 6

Step 7

Finally, sprinkle generously with 1 tablespoon of toasted sesame seeds. The crunchy texture and savory flavor of the sesame seeds add the perfect finishing touch.

Step 7

Step 8

Serve your delicious braised burdock root on a nice plate. It’s incredibly tasty served over warm rice! It’s also fantastic in kimbap, so making a large batch is highly recommended for versatile enjoyment. Enjoy your meal!
