Main Ingredients

  • 7 Eggs (hard-boiled)
  • 1 stalk Green Onion (white part preferred)
  • 2 Jalapeños (adjust to your preference)
  • 5-7 cloves Garlic (peeled)

Braising Sauce

  • 1/2 cup Won Dang (raw sugar) (approx. 70g)
  • 2/3 cup Jin Ganjang (soy sauce) (approx. 100ml)
  • 400ml Water (2 cups)

Cooking Instructions

Step 1

First, let’s hard-boil the eggs. Add plenty of water to a steamer, and steam the eggs over high heat for 10 minutes. Immediately immerse them in cold water to cool, then peel. This method makes them easier to peel without breaking. Set the peeled eggs aside for now.

Wash the green onion and cut it into 5cm lengths. For the jalapeños, remove the stems and poke several holes on both sides with a chopstick or skewer; this helps them absorb the sauce better. Peel the garlic cloves. If you prefer less heat, you can omit the jalapeños or remove their seeds.

Pour 400ml (2 cups) of water into a pot. Add 1/2 cup of Won Dang and 2/3 cup of Jin Ganjang. Place over high heat and stir with a spatula or spoon until the sugar is completely dissolved, creating the braising sauce. Once the sauce comes to a boil, reduce the heat to medium-low.

Once the sauce is boiling, add the hard-boiled eggs, chopped green onion, pierced jalapeños, and garlic cloves. Simmer uncovered over medium-low heat for 20-30 minutes, allowing the flavors to meld. Periodically turn the eggs to ensure they are evenly coated with the sauce. Continue to simmer until the sauce is reduced to a desired consistency.

Your delicious braised eggs are ready! The sauce is perfectly sweet and not too salty, making it an excellent side dish for rice.
