  • 1/2 Onion
  • 1/2 Carrot
  • 3-5 Napa Cabbage Leaves
  • 1/2 Mushroom (e.g., shiitake, king oyster)
  • A little Potato Starch

Braising Sauce

  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Vinegar

Prepare all the ingredients for the dish. Have fresh mackerel and a variety of vegetables ready.

Chop the onion, carrot, cabbage, mushroom, and other vegetables into bite-sized pieces (about 1-2 cm thick). Lightly oil a pan and quickly stir-fry the vegetables over high heat just until they soften slightly. Be careful not to overcook, as they can become mushy.

Temporarily transfer the stir-fried vegetables to a plate and let them cool slightly. This helps maintain the vegetables’ crisp texture.

Rinse the mackerel clean and pat it dry thoroughly with paper towels to remove any fishy odor. Cut the mackerel into manageable pieces (about 3-4 cm). Lightly coat the outside of the cut mackerel pieces with potato starch. Coating with starch helps the sauce adhere well and prevents the fish from breaking apart.

Heat a little oil in a pan and pan-fry the starch-coated mackerel on both sides until lightly golden brown and slightly crisp. Browning the exterior slightly is the key.
