Main Ingredients
  • 1 block firm tofu (approx. 300-400g)
  • 1/2 onion
  • 1 stalk green onion

Braising Sauce
  • 5 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp brown sugar
  • Pinch of black pepper
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 ladle anchovy or kelp broth (approx. 150ml)
  • Sesame seeds for garnish

Cooking Instructions

Step 1

Cut the block of tofu into thick slices, about 1.5 to 2 cm thick. After slicing, place the tofu pieces on paper towels and gently press to remove excess moisture. This step is crucial for preventing oil splatter when frying and achieving a crispier texture.

Step 2

Slice the onion into thick julienne strips. Chop the green onion into bite-sized pieces. The green onion will be added towards the end to impart fragrance and add color.

Step 3

In a small bowl, combine 5 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp brown sugar, 1 Tbsp gochugaru, and a pinch of black pepper. Pour in 1 ladle of broth and whisk everything together until well combined. This is your braising sauce.

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil. Carefully arrange the dried tofu slices in the hot pan, ensuring they don’t overcrowd. Fry the tofu without letting it stick to the pan.

Step 5

Pan-fry the tofu slices until each side is golden brown and slightly crispy. Flipping them occasionally will ensure even cooking. This frying process firms up the tofu and enhances its nutty flavor.

Step 6

Once the tofu is nicely browned, arrange the julienned onions and chopped green onions around the tofu in the pan. Pour the prepared braising sauce evenly over the tofu and vegetables. Reduce the heat to medium-low to prevent the sauce from burning.

Step 7

Simmer gently until the sauce has slightly reduced and coated the tofu with a glossy sheen. Turn off the heat and sprinkle with sesame seeds for an extra nutty aroma. Serve hot with your favorite rice. Enjoy!
