Baek Jong Won’s All-Purpose Soy Sauce Ingredients (Make ahead, it’s very useful!)

  • 1.5 cups ground pork (approx. 150g)
  • 3 cups soy sauce (approx. 450ml)
  • 1/2 cup sugar (based on paper cup, approx. 80g)

First, let’s make the all-purpose soy sauce, the key to delicious braised tofu. Place the ground pork in a pan and stir-fry over medium heat. Lightly wiping away the rendered fat with a paper towel can result in a cleaner taste.

Once the ground pork is somewhat cooked, add 3 cups of soy sauce and 1/2 cup of sugar (measured with a paper cup) to the pan. The ratio of soy sauce to sugar is a crucial point for achieving a balance of sweetness and saltiness.

Now, mix the ground pork, soy sauce, and sugar in the pan thoroughly with a spatula. It’s important to stir and cook while preventing the seasoning from burning.
