  • Vienna Sausages (1/2 to 2 handfuls, approx. 100g), sliced diagonally or cut decoratively
  • Firm Tofu (1/2 block, approx. 150g), sliced into 1.5cm thick pieces
  • Green Onion (1/2 stalk), diagonally sliced
  • Onion (1/2), thinly sliced
  • Aged Kimchi (1 handful, approx. 100g), cut into manageable pieces
  • Store-bought Beef Bone Broth (1 pack, approx. 500g)

Seasoning Ingredients

  • Gochugaru (Korean chili flakes) 2 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Soy Sauce 2 Tbsp
  • Minced Garlic 1 Tbsp
  • Black Pepper (2 pinches)

Cooking Instructions

Step 1

Prepare all your ingredients. Slice the Spam and sausages into about 1.5cm thick pieces. Cut the tofu into similar sized pieces. Slice the green onions diagonally and the onion thinly. Chop the kimchi into bite-sized pieces. For an extra layer of flavor, you can lightly pan-fry the Spam and sausages before adding them.

Step 1

Step 2

In a small bowl, combine all the seasoning ingredients: Gochugaru (2 Tbsp), Gochujang (1 Tbsp), Soy Sauce (2 Tbsp), Minced Garlic (1 Tbsp), and Black Pepper (2 pinches). Mix well to create the seasoning paste. This paste is key to the stew’s delicious flavor.

Step 2

Step 3

In a deep pot, arrange the prepared Spam, sausages, kimchi, tofu, green onions, and onion. Layering the ingredients neatly helps them cook evenly and looks appealing. Pour the entire pack of store-bought beef bone broth over the arranged ingredients.

Step 3

Step 4

Bring the pot to a boil over medium heat. Once boiling, stir in the prepared seasoning paste, ensuring it’s well distributed. Let the stew simmer for about 10 minutes, or until all ingredients are tender and flavors have melded. Spooning some broth over the ingredients occasionally will help them absorb more flavor. Once it’s bubbling and fragrant, your delicious Budae Jjigae is ready! Feel free to add ramen noodles or rice cakes during the last few minutes of cooking for an even more satisfying meal.
