Special Donburi Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp mirin (or cooking sake)
  • 1/2 Tbsp minced garlic
  • A pinch of black pepper

For Stir-frying Pork Belly

  • 1 Tbsp water
  • 1 Tbsp sugar

Optional Ingredients (For Extra Flavor!)

  • 1 shiitake mushroom
  • A pinch of chili powder

Cooking Instructions

First, prepare the vegetables. Thinly slice the onion. Finely chop the white and green parts of the green onion separately. If desired, thinly slice the shiitake mushroom. (Tip: If you want a simpler version, using just onion and green onion is perfectly delicious!)

In a small bowl, combine the sauce ingredients: 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp mirin, 1/2 Tbsp minced garlic, and a pinch of black pepper. Mix well to create your donburi sauce in advance. (Tip: Having the sauce ready beforehand makes stir-frying much easier.)

Heat a pan over medium heat without adding any oil. Add the thinly sliced pork belly and cook until it releases its own fat.
